At a Glance
The word. A dairy residue identified by consistency and where it settles.
A place to read. The historical definition below, 1650 dictionary, unnumbered definition page 14; facsimile PDF page 342.
Historical Definition
Caseus præparatus is the viscous residue remaining at the bottom of the milk that runs from the cheese.
Meaning
The description concerns what remains in liquid associated with cheese, not simply the solid cheese itself. Viscosity and settling at the bottom are the recognition clues. The preparation is therefore best understood through the relation of liquid, separated material and residue.
The historical wording is compact and does not identify a modern standardized dairy product. Preserving its sequence is more accurate than replacing it with a guessed name. If a recipe describes further processing, that account may clarify what is collected and how it is used.
Places to Read
Chymus. A residue term rather than the name of one fixed material.
Excrementa. Superfluities described through expulsion by Nature.
