Liquors are said to be squeezed from their bodily substances under a press rather than separated like distilled waters and oils. Some oils follow the same route because heating is said to produce an unpleasant smell. The mechanical verb and instrument therefore mark a substantive alternative, not a minor spelling or stylistic variation within one universal distillation process.
